How do I store it after opening?
Keep the pieces submerged in the oil, always use a clean, dry spoon, and store somewhere cool and dark. A wet spoon is the main cause of spoilage.

There's an oil layer on top - is that normal?
Yes - that oil layer is a natural barrier that keeps the pickle safe and full of flavour. Keep the pieces submerged and always use a dry spoon, and it'll keep beautifully.
